my favorite asian restaurants make one thing and do it very well. i take the same approach. i make one cookie, and i make it really good. that is the entire plan.
i have a real fixation with this one cookie. thin, deep browned notes, flaky sea salt, and a hundred small revisions that probably only i notice.
my culinary background is breading chicken in the back of a chick-fil-a and thousands of hours of cooking videos on youtube.
more flavors? always in the works. i test constantly, but a flavor only reaches you once it has earned its place.
my worst-rated video is also my most-viewed one. no one made me post it, i just care more about being real than polished. that is how i feel about the food too, i take the good with the bad instead of pretending there is only good.
